Wheat noodles150 g reshteh or flat noodles
Rajma, dry (dried red kidney beans)⅓ cup, soaked
Chickpeas, dry⅓ cup, soaked
Whole masoor (brown lentils)⅓ cup brown lentils
Flat leaf parsley1 big bunch
Coriander leaves (cilantro)1 big bunch
Spinach1 bunch
Dill leavesa small bunch
Spring onion (green onion, scallion)1 bunch, for chives
Onion3, sliced
Garlic5 cloves
Mint leaves2 tsp dried mint
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)4 tbsp
Kashk⅔ cup

Water8 cupsMethod
- 1Pressure cook the soaked beans and chickpeas with half the water for 5 whistles. Let the pressure release naturally.
- 2Fry the onions in most of the oil until deep golden. Set half aside. In a little oil, fry the garlic, then warm the dried mint for a few seconds.
- 3Add the lentils, turmeric, the rest of the onions and water to the beans. Simmer 20 minutes.
- 4Add the chopped herbs and spinach and simmer 20 minutes, then the noodles until tender.
- 5Stir in some kashk. Serve topped with more kashk, fried onions, garlic and mint oil.
Serve it like thisLadle into wide bowls and top with kashk swirls, fried onions, garlic and mint oil. Serve hot.
