Ingredients

4 servings
Potato4 medium, in 2 cm cubes
Red bell pepper (red capsicum, red pepper)1, chopped
Onion1 large, chopped
Chicken sausages4 chicken sausages, sliced
Olive oil2 tbsp
Paprika1½ tsp
Garlic2 cloves, minced
Dried mixed herbs (italian seasoning)1 tsp
Saltto taste
Black pepperto taste
Spinach2 handfuls
Egg4
Flat leaf parsleyto finish

Method

4 steps
  1. 1Heat the oven to 220°C. Toss the potatoes with oil, paprika, salt and herbs on a large tray and roast.
  2. 2Add the pepper, onion, garlic and sausage, toss and roast again.
  3. 3Stir in the spinach, make 4 wells and crack in the eggs. Roast until the whites set.
  4. 4Season the eggs and scatter parsley.
Serve it like this
