Ingredients

6 servings
Prawns (shrimp)250 g, peeled and deveined
Egg white1
Cornflour (cornstarch)1 tbsp
Ginger1.5 cm, grated
Garlic1 clove
Spring onion (green onion, scallion)2 stalks, chopped
Soy sauce1 tsp
Sesame oil1 tsp
Salta pinch
White bread6 slices, slightly stale
Sesame seeds⅓ cup
Cooking oil (vegetable oil)for shallow frying, about 5 tbsp absorbed

Method

5 steps
  1. 1Blitz prawns, egg white, cornflour, ginger, garlic, soy, sesame oil and salt to a sticky paste. Stir in spring onion.
  2. 2Trim crusts and spread paste thickly on each slice, right to the edges.
  3. 3Press paste side into sesame seeds.
  4. 4Shallow fry paste side down for 2 minutes, flip and fry 1 minute.
  5. 5Drain, cut into triangles and serve hot.
Serve it like this

Fan triangles on a plate with sweet chilli sauce for dipping and spring onion scattered over. Serve hot.
