Peanutsroasted, coarsely ground
Dried red chilli15, soaked
Shallots8
Garlic6 cloves
Lemongrass2 stalks
Galangala thumb
Cooking oil (vegetable oil)3 tbsp
Water2½ cups
Thin coconut milk¾ cup
Palm sugar (gula melaka)4 tbsp
Tamarindpulp
Pineapplegrated
Salt1 tsp
Prawns (shrimp)peeled
Squidrings
Fish cakesfish balls or fish cake
Eggquail eggs, boiled
Okra (lady's finger)whole
Firm tofucubed

Method

5 steps
  1. 1Pound the chillies, shallots, garlic, lemongrass and galangal into rempah and fry in the oil for 10 minutes.
  2. 2Add the water, coconut milk, palm sugar, tamarind, pineapple, salt and peanuts. Simmer 15 minutes, stirring, until thick.
  3. 3Thread the seafood, fish cakes, eggs, okra, tofu and mushrooms onto bamboo skewers.
  4. 4Set the sauce in a pot on a table burner, keeping it at a gentle bubble.
  5. 5Dip skewers until cooked: prawns pink, squid opaque, 1 to 3 minutes. Eat straight away.
Serve it like this
