Ingredients

4 servings
Egg noodles400 g fresh saimin noodles or 300 g dried
Kombua 10 cm piece
Dried shrimp2 tbsp
Water1.6 litres
Soy sauce1½ tbsp
Sugar1 tsp
Saltto taste
Canned pork luncheon meat4 slices
Fish cakeskamaboko, sliced
Egg2, as a thin omelette
Bok choy (pak choi)2 heads
Spring onion (green onion, scallion)2

Method

4 steps
  1. 1Soak the kombu and dried shrimp in the water for 20 minutes. Heat to just below a boil, remove the kombu, and simmer 10 minutes. Strain.
  2. 2Season with soy, sugar and salt.
  3. 3Fry the Spam slices and cut into strips. Make a thin omelette and slice it.
  4. 4Cook the noodles and blanch the bok choy. Assemble in bowls and pour over hot broth.
Serve it like this

Serve in deep bowls with Spam, kamaboko, egg and greens arranged on top, with chopsticks and a spoon.
