Ingredients

4 servings
Tomato8 ripe tomatoes, chopped
Onion2, sliced
Garlic6 cloves, crushed
Gingerthumb, crushed
Green chilli2
Dried thyme1 tsp (fresh is best)
Flat leaf parsleya handful
Spring onion (green onion, scallion)2, chopped
Cooking oil (vegetable oil)2 tbsp
Dried salted fish150 g salted fish, soaked, flaked
Saltto taste

Method

4 steps
  1. 1Fry the soaked salted fish in oil until golden, then set aside.
  2. 2Cook onion until soft, add garlic, ginger, thyme and chilli and fry 1 minute.
  3. 3Add tomatoes and cook down until thick and saucy.
  4. 4Return the fish, simmer 5 minutes and finish with parsley and spring onion.
Serve it like this

Serve with white rice, a bowl of lentils and a chilli paste on the side.
