Classic rock cakes.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)1¾ cups
Baking powder2 tsp
Butter7 tbsp, cold
Sugar75 g in dough, 15 g demerara on top
Allspice1 tsp mixed spice
Raisinsmixed dried fruit
Candied peel (tutti frutti or candied orange peel)chopped
Egg1
Milk1 tbsp

Method

5 steps
  1. 1Rub the cold butter into the flour, baking powder and spice.
  2. 2Stir in the sugar and fruit, then add the egg and milk to make a stiff dough.
  3. 3Spoon rough heaps onto a lined tray and sprinkle with demerara sugar.
  4. 4Bake at 200°C for 15 to 20 minutes.
  5. 5Cool on a rack before eating.
Serve it like this

Pile on a plate and serve with butter and a pot of tea.
