Riz a djej, Lebanese chicken and rice.

Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in pieces
Basmati rice2 cups, rinsed
Minced beef (beef mince, beef or buff keema)300 g lamb or beef mince
Onion1 large, chopped
Butter3½ tbsp
Baharat2½ tsp
Cinnamon powder1 tsp
Whole spicescinnamon, bay, cardamom
Almonds⅓ cup, blanched
Pine nuts3 tbsp
Waterabout 7 cups
Saltto taste
Black pepper½ tsp

Method

5 steps
  1. 1Simmer the chicken in water with the whole spices and salt for 40 minutes. Lift out, pull into pieces and keep 3 1/2 cups broth.
  2. 2Brown the onion and mince in half the butter with baharat and cinnamon.
  3. 3Add rice, stir to coat, then add the hot broth. Cover and cook on low 18 minutes.
  4. 4Fry almonds and pine nuts in the remaining butter until golden.
  5. 5Brown the chicken pieces quickly in the same pan. Mound rice on a platter, top with chicken and nuts.
Serve it like this

Mound on a large platter, chicken on top, nuts scattered over, and yoghurt alongside.
