Ingredients

4 servings
Sugar60 g for caramel, 50 g for custard
Water2 tbsp
Milk1⅔ cups
Egg3
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

4 steps
  1. 1Melt 60 g sugar with 1 tbsp water until deep amber, add 1 tbsp hot water and pour into 4 cups.
  2. 2Warm the milk with the remaining sugar until dissolved. Whisk into the eggs gently with vanilla. Strain.
  3. 3Pour over the caramel, cover with foil and bake in a water bath at 150 C for 30 to 35 minutes.
  4. 4Chill at least 4 hours, then run a knife around and turn out.
Serve it like this

Turn out onto a small plate so the caramel pools around it, with whipped cream and a cherry if you like.
