Masa harina3½ cups
Water2¼ cups warm

Rajma, dry (dried red kidney beans)refried beans, from 3/4 cup dry
Queso fresco150 g
Mozzarella1 cup, quesillo
Cooking oil (vegetable oil)for the tawa
Cabbage¼ head, shredded
Carrot1, grated
Onion1, sliced
Vinegar⅓ cup
Dried oregano1 tsp
Green chilli1
Tomato3, for salsa
Garlic1 cloveMethod
- 1Make curtido: blanch cabbage briefly, mix with carrot, onion, vinegar, oregano, chilli and salt. Rest at least 1 hour.
- 2Knead masa harina, water and salt to a soft, moist dough.
- 3Mix beans and cheeses. Make a cup with a ball of dough, fill, close and pat into a thick disc.
- 4Cook on an oiled tawa 4 to 5 minutes a side.
- 5Simmer tomato and garlic, blend into a thin salsa. Serve pupusas with curtido and salsa.
Serve it like thisServe two hot pupusas per plate with a mound of curtido and thin tomato salsa poured over. Eat with your hands.
