Classic blender protein pancakes.

Ingredients

2 servings
Rolled oats (porridge oats)1 cup rolled oats
Banana1 large ripe
Egg2
Hung curd (greek yogurt)⅔ cup Greek yoghurt or hung curd
Milk¼ cup
Baking powder1 tsp
Cinnamon powdera pinch
Salta pinch
Cooking oil (vegetable oil)for the pan
Blueberries½ cup, to serve
Honey1 tbsp, to drizzle

Method

4 steps
  1. 1Blend the oats into flour, then add the banana, eggs, yoghurt, milk, baking powder, cinnamon and salt and blend until smooth. Rest 5 minutes.
  2. 2Heat a non stick pan on medium low, wipe with oil and pour small rounds.
  3. 3Cook until bubbles appear and the edges look set, then flip and cook another minute.
  4. 4Stack, top with blueberries and a drizzle of honey.
Serve it like this

Stack four small pancakes on a warm plate, pile blueberries on top, drizzle honey and add a spoon of yoghurt on the side.
