Ingredients

6 servings
Water½ cup
Butter100 g
Salta pinch
Sugar1 tsp
Maida (all-purpose flour, plain flour)1¼ cups
Egg5
Vanilla ice creamabout 3 cups
Dark chocolate (bittersweet chocolate)150 g
Fresh cream (thickened cream, heavy cream)⅔ cup

Method

5 steps
  1. 1Bring water, butter, salt and sugar to a boil, tip in the flour and beat over low heat until it forms a ball.
  2. 2Cool slightly and beat in eggs one at a time to a glossy paste.
  3. 3Pipe walnut sized mounds on a lined tray. Bake at 200 C, then 180 C, until deep golden and dry.
  4. 4Heat cream until steaming, pour over the chopped chocolate and stir smooth.
  5. 5Split the cooled puffs, fill with a scoop of ice cream and pour over hot chocolate sauce at the table.
Serve it like this

Stack three puffs per plate or pile in a pyramid, and pour the warm chocolate sauce over at the table.
