Prawns (shrimp)300 g medium, cleaned
Besan (chickpea flour, gram flour)4 tbsp
Rice flour1½ tbsp
Kashmiri chilli powder1½ tsp
Ajwain (carom seeds)½ tsp
Ginger garlic paste1 tbsp
Lemon juice1 tbsp
Cooking oil (vegetable oil)for deep frying, about 3 tbsp absorbed
Corn tortilla8 small
Cabbage1 cup, shredded
Cucumber½, julienned
Mayonnaise3 tbsp
Chipotle in adobo½ chipotle, minced
Tamarind1 tsp paste
Chaat masala1 tsp
Coriander leaves (cilantro)a few sprigs
Lemon1 lime, in wedges

- 1Toss the prawns with ginger garlic paste, lemon juice, chilli, ajwain and salt. Rest 10 minutes.
- 2Add besan, rice flour and the water to make a thick coating.
- 3Mix mayonnaise, chipotle and tamarind. Toss cabbage and cucumber with a pinch of salt.
- 4Heat the oil to 180°C on medium high heat and fry the prawns in batches for 2 to 3 minutes.
- 5Sprinkle the prawns with chaat masala. Warm the tortillas on a tawa 30 seconds a side.
- 6Fill each tortilla with slaw, 3 prawns and mayo. Finish with coriander and lime.
Serve it like thisLine the tacos in a row on a long board, three prawns standing in each. Pipe little dots of chipotle mayo along the top and add coriander and lime.
