Ingredients

4 servings
Prawns (shrimp)400 g, cleaned and deveined
Besan (chickpea flour, gram flour)½ cup
Rice flour2 tbsp
Ginger garlic paste1 tbsp
Kashmiri chilli powder2 tsp
Turmeric (ground turmeric)¼ tsp
Ajwain (carom seeds)½ tsp
Lemon juice2 tsp
Salt1 tsp
Water2 tbsp
Cooking oil (vegetable oil)absorbed from deep frying
Chaat masala1 tsp

Method

4 steps
  1. 1Marinate prawns with ginger garlic paste, lemon, turmeric and salt for 15 minutes.
  2. 2Add besan, rice flour, chilli powder, ajwain and a splash of water to coat thickly.
  3. 3Deep fry in hot oil 2 to 3 minutes until crisp and the prawns turn opaque.
  4. 4Sprinkle chaat masala and serve with onion and lemon.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
