Ingredients

4 servings
Maida (all-purpose flour, plain flour)2 cups
Water½ cup plus 2 tbsp hot for the dough, 1/2 cup for steaming
Salt1 tsp, divided
Chicken mince (ground chicken)300 g
Napa cabbage (wombok, chinese leaf)4 leaves, finely chopped
Spring onion (green onion, scallion)2 stalks, sliced
Ginger2.5 cm, grated
Soy sauce2 tbsp, divided
Sesame oil2 tsp
White peppera pinch
Cooking oil (vegetable oil)1½ tbsp
Chinkiang black vinegar1½ tbsp, for the dip

Method

6 steps
  1. 1Stir the hot water into the maida with a pinch of salt, knead 5 minutes and rest 30 minutes under a cloth.
  2. 2Salt the cabbage for 10 minutes and squeeze dry. Mix with the chicken, spring onion, ginger, 1 tbsp soy sauce, sesame oil and pepper, stirring in one direction until sticky.
  3. 3Roll 28 ovals about 10 cm long. Lay a line of filling down the middle, fold over and press the edges together only in the centre, leaving both ends slightly open.
  4. 4Heat 1 tbsp oil in a wide pan with a lid on medium. Lay the potstickers in close rows and fry 2 minutes.
  5. 5Pour in the 1/2 cup water, cover and steam 8 minutes until the water is gone. Cut one open to check the chicken is cooked through with no pink.
  6. 6Uncover, drizzle the rest of the oil around and fry 2 more minutes. Mix the remaining soy sauce with the vinegar for the dip.
Serve it like this

Turn the whole pan out onto a plate so the golden bases face up, with the dip alongside.
