Ingredients

4 servings
Potato3 medium, boiled and mashed
Maida (all-purpose flour, plain flour)¾ cup, plus for dusting
Butter2 tbsp, for dough and frying
Salt¾ tsp
Black peppera pinch

Method

4 steps
  1. 1Mash the potatoes while warm with a little butter, salt and pepper.
  2. 2Work in the flour to a soft dough.
  3. 3Roll into a 1 cm round on a floured board and cut into 4 quarters.
  4. 4Cook on a dry or lightly buttered pan, 4 minutes a side, until golden.
Serve it like this

Serve hot from the pan with butter, or alongside fried eggs, mushrooms and tomatoes for a full Ulster fry.
