Classic polos curry.

Ingredients

5 servings
Raw jackfruit (young green jackfruit)600 g young jackfruit, cubed
Sri Lankan roasted curry powder1½ tbsp
Red chilli powder (indian red chili powder)1½ tsp
Turmeric (ground turmeric)½ tsp
Onion1, sliced
Garlic3 cloves
Ginger2.5 cm
Green chilli2
Curry leaves1 sprig
Pandan leaves1 piece
Whole spices1 cinnamon stick, 3 cloves
Kudampuli1 piece goraka
Thin coconut milk1 cup
Thick coconut milk⅔ cup
Cooking oil (vegetable oil)2 tbsp
Saltto taste

Method

4 steps
  1. 1Oil your hands and knife. Cut jackfruit into cubes and pressure cook with turmeric and salt.
  2. 2Fry whole spices, curry leaves, pandan, onion, garlic, ginger and chilli in oil.
  3. 3Add jackfruit, curry powder, chilli powder and goraka. Toss to coat and fry 5 minutes.
  4. 4Add thin coconut milk and simmer until thick, then add thick coconut milk and simmer 5 minutes.
Serve it like this

Spoon into a clay pot as part of a rice and curry spread with parippu, sambol and a meat or fish curry.
