Spinach1 kg, washed and dried well
Cooking oil (vegetable oil)½ cup
Beef600 g chuck, chunks
Dried white beans (haricot beans, navy beans)1 cup dry, soaked overnight
Onion1 large, chopped
Garlic6 cloves
Harissa paste1 tbsp
Mint leaves2 tbsp dried
Coriander leaves (cilantro)bunch, chopped

- 1Chop the spinach and fry in the oil on medium heat, stirring often, until it shrinks and turns very dark green, almost black.
- 2Add onion and garlic and cook 5 minutes.
- 3Add the beef, harissa and salt and stir to coat.
- 4Add the drained beans and water. Cover and simmer until the beef and beans are very tender.
- 5Stir in dried mint and fresh coriander and rest 10 minutes.
Serve it like thisServe in deep bowls over couscous or with bread, a little harissa on the side.
