Ingredients

4 servings
Maida (all-purpose flour, plain flour)4 cups 00 flour or maida
Water1⅓ cups, cool
Instant dry yeast1 tsp
Salt2 tsp
Tomato1 tin peeled plum tomatoes, crushed
Garlic5 cloves, thinly sliced
Dried mixed herbs (italian seasoning)1½ tsp dried oregano
Olive oil3 tbsp

Method

4 steps
  1. 1Mix flour, water, yeast and salt into a soft dough. Knead 10 minutes, cover and rise until doubled (2 hours, or overnight in the fridge for better flavour). Divide into 4 balls and rest 30 minutes.
  2. 2Heat the oven to its maximum (250C or more) with a pizza stone or upturned heavy tray inside for 45 minutes.
  3. 3Stretch dough, spread tomato, scatter garlic and oregano, drizzle with oil.
  4. 4Bake 7 to 9 minutes until the rim is charred and the tomato bubbling.
Serve it like this

Serve whole on a board, cut at the table, with extra oregano and good olive oil for drizzling.
