Ingredients

4 servings
Dried white beans (haricot beans, navy beans)1 cup dry, soaked and boiled
Onion1, thinly sliced
Sumac1 tsp
Flat leaf parsleya big handful, chopped
Tomato1 large, diced
Egg2, boiled and quartered
Black olivesa handful
Olive oil3 tbsp
Lemon juice2 tbsp
Vinegar2 tsp
Kashmiri chilli powder½ tsp, or pul biber
Salt¾ tsp

Method

4 steps
  1. 1Soak beans overnight and simmer until creamy inside but whole. Drain and cool.
  2. 2Rub the onion slices with salt and sumac until soft and pink.
  3. 3Whisk oil, lemon, vinegar and chilli. Toss with beans, onion, tomato and parsley.
  4. 4Top with egg quarters and olives.
Serve it like this

Serve on a flat plate with egg and olives on top and a dusting of sumac, alongside grilled köfte and bread.
