1Heat the oven to 175 C. Melt 50 g butter in a 9 inch round tin and sprinkle the brown sugar evenly over it.
2Lay the pineapple rings on the sugar with a cherry in the centre of each.
3Cream the remaining butter and sugar, beat in the eggs and vanilla, then fold in maida, baking powder and salt with the milk and 2 tbsp pineapple syrup.
4Spread the batter carefully over the fruit and bake 40 to 45 minutes.
5Cool 5 minutes only, run a knife round the edge, put a plate on top and flip in one confident move.
Serve it like this
Serve warm wedges caramel side up on a flat plate, with a scoop of vanilla ice cream or a spoon of whipped cream.
