Ingredients

Porkpork belly, diced, optional
Shrimp paste2 tbsp bagoong
Bitter gourd (bitter melon)1, sliced
Brinjal (eggplant, aubergine)2, in chunks
Okra (lady's finger)8
Green beanslong beans, cut
Pumpkinsquash, in chunks
Tomato2, chopped
Onion1, sliced
Garlic4 cloves
Ginger2.5 cm
Water¾ cup
Cooking oil (vegetable oil)1 tbsp

Method

3 steps
  1. 1Fry pork in oil until crisp and the fat renders.
  2. 2Add garlic, onion, ginger and tomato and cook until soft, then stir in bagoong.
  3. 3Add pumpkin and water and simmer 5 minutes, then the rest of the vegetables. Cover and cook, shaking the pot instead of stirring.
Serve it like this

Serve in a clay pot or bowl with vegetables piled on top and crisp pork bits scattered over, with steamed rice.
