Ingredients

Guavaabout 7 ripe pink guavas
Sugar2 cups
Lemon juice2 tsp
Butter1 tbsp, plus for greasing

Method

4 steps
  1. 1Cook guavas in a little water until soft, then puree and sieve out the seeds.
  2. 2Cook the pulp with sugar in a heavy pan, stirring often.
  3. 3Add lemon juice and butter and cook until a drop sets firm on a cold plate.
  4. 4Spread in a buttered tray, cool overnight and cut into diamonds.
Serve it like this

Cut into diamonds, wrap in coloured paper for the kuswar tray, or serve slices with a little cheese.
