Ingredients

12 servings
Puff pastry1 sheet, rolled into a log
Sugar1 cup
Water½ cup
Lemona strip of peel
Cinnamon1 stick, plus ground to serve
Milk1¼ cups
Maida (all-purpose flour, plain flour)3 tbsp
Egg yolk6 yolks

Method

5 steps
  1. 1Boil sugar, water, lemon peel and cinnamon for 3 minutes to a syrup.
  2. 2Whisk flour into a little cold milk, then heat with the rest of the milk until thick. Pour in the hot syrup, then cool slightly and whisk in yolks. Strain.
  3. 3Roll the pastry into a tight log, slice into 12 rounds and press each into a muffin tin, thin at the base and up the sides.
  4. 4Fill three quarters with custard and bake at the hottest oven setting until blistered and charred in spots.
  5. 5Cool a little and dust with cinnamon and icing sugar.
Serve it like this

Serve warm on a small plate, dusted with cinnamon and icing sugar, with a strong coffee.
