Rajma, dry (dried red kidney beans)1¼ cups borlotti or rajma, soaked overnight
Olive oil3 tbsp
Onion1, chopped
Carrot1, chopped
Celery1 stick, chopped
Garlic2 cloves
Rosemary1 sprig
Tomato puree150 g passata
Pasta200 g ditalini or small pasta
Water6 cups
Parmesanto serve, plus a rind in the pot if you have one

- 1Pressure cook soaked beans with fresh water, 5 to 6 whistles, and let pressure release naturally.
- 2Soften onion, carrot, celery, garlic and rosemary in oil.
- 3Add passata, beans and their liquid. Mash or blend a third. Simmer 10 minutes.
- 4Add pasta and cook in the soup, stirring and adding water as needed, until tender.
- 5Rest 5 minutes and serve with parmesan, oil and pepper.
Serve it like thisServe thick in deep bowls with a thread of olive oil, parmesan and black pepper. It thickens as it sits.
