Ingredients

4 servings
Padrón peppers (padrón or shishito peppers)250 g
Olive oil1 tbsp
Butter1½ tbsp, soft
Miso paste1 tbsp
Lemon½ lemon
Bonito flakesa big pinch
Sesame seeds1 tsp, toasted
Salta pinch of flaky salt

Method

4 steps
  1. 1Mash the butter and miso with 1 tsp water into a smooth paste.
  2. 2Heat the olive oil in a heavy pan on high heat until it shimmers. Add the peppers and cook 4 to 5 minutes, shaking.
  3. 3Take the pan off the heat. Add the miso butter and toss until glossy. Squeeze in the lemon.
  4. 4Tip onto a plate, top with bonito flakes, sesame and a pinch of flaky salt.
Serve it like this

Pile the peppers high on a small dark plate so the bonito flakes sit on top and dance. Serve with toothpicks and a lemon wedge on the side.
