Ingredients

Rice noodles160 g wide flat rice noodles, soaked
Chicken, bonelessthinly sliced
Egg2
BroccoliChinese broccoli (kai lan), or broccoli with stems, sliced
Garlic4 cloves, chopped
Kecap manis1 tbsp sweet dark soy
Soy sauce1 tbsp
Oyster sauce1 tbsp
Jaggery1 tsp
White peppera big pinch
Cooking oil (vegetable oil)2 tbsp
Vinegar1 tbsp, with sliced chilli to serve
Green chilli1, sliced

Method

4 steps
  1. 1Soak the noodles until pliable, drain and toss with 1 tsp of the sweet soy so they do not stick.
  2. 2Fry the garlic and chicken in very hot oil until the chicken is cooked through with no pink. Add the broccoli stems, then leaves.
  3. 3Push aside, scramble the eggs, then add the noodles. Spread them out and let them sit without stirring.
  4. 4Add sauces, sugar and pepper and toss. Let char once more. Serve with chilli vinegar.
Serve it like this

Slide onto a flat plate so the charred noodles show, with a small bowl of chilli vinegar and a spoon of chilli flakes beside it.
