Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups
Instant dry yeast1 tbsp
Milk¾ cup plus 1 tbsp, lukewarm
Sugar80 g dough, 80 g glaze
Egg yolk6 yolks
Egg1
Butter6 tbsp, melted
Salta pinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Cooking oil (vegetable oil)absorbed; deep fry
Fruit jam (jam or preserves)rose petal jam, or any thick jam
Rose water1 tsp, if using plain jam
Candied peel (tutti frutti or candied orange peel)chopped orange peel, to top

Method

4 steps
  1. 1Beat yolks, egg and sugar until pale. Add milk, yeast, flour, salt, vanilla and knead, then add the butter and knead until glossy.
  2. 2Rise until doubled. Roll 1.5 cm thick, cut circles and rise again.
  3. 3Fry at 170 C until deep golden, about 2 minutes a side.
  4. 4Fill with rose jam and brush with a sugar water glaze. Top with peel.
Serve it like this
