Beefor buffalo, sliced
Water5 cups
Lemongrass2 stalks, bruised
Fresh red chillies (fresh red chiles)3
Garlic5 cloves
Shallots4
Brinjal (eggplant, aubergine)Thai or pea eggplants
Pumpkinchunks
Green beanslong beans, cut
Button mushroomsliced
Glutinous rice (sweet rice)soaked and pounded
Fish sauce2 tbsp, or padaek
Black pepper1 tsp, plus sakhan chilli wood if you have it
Dill leavesa bunch

Method

4 steps
  1. 1Simmer the beef with lemongrass, chilli, garlic and shallots in the water for 25 minutes.
  2. 2Add the eggplant and pumpkin and cook 10 minutes. Mash some eggplant against the pot.
  3. 3Add the beans, mushrooms and pounded rice and simmer 5 minutes, stirring.
  4. 4Season with fish sauce and pepper, then stir in the dill and basil.
Serve it like this

Serve in a bowl with sticky rice in a basket, raw vegetables and jaew chilli dip on the side.
