Ingredients

4 servings
Short grain rice (sushi rice)1½ cups, cooked
Nori sheets4 full sheets
Tuna in oil (tinned tuna)1 can, drained
Mayonnaise2 tbsp
Egg2, cooked as a thin omelette
Lettuce4 leaves
Cucumber½, thinly sliced
Soy sauce2 tsp
Salta pinch

Method

5 steps
  1. 1Cook rice and season lightly with salt; mix tuna with mayo and soy.
  2. 2Lay a nori sheet shiny side down on cling film, diagonal. Spread a thin square of rice in the centre.
  3. 3Stack lettuce, omelette, tuna and cucumber, then another thin layer of rice.
  4. 4Fold the four corners over to wrap, then wrap tightly in film and rest 5 minutes.
  5. 5Slice in half through the film with a wet knife.
Serve it like this

Cut in half to show the layers, stack cut side up in a bento box or on a plate with pickles and fruit.
