Daifuku, the classic.

Ingredients

4 servings
Glutinous rice flour (sweet rice flour)1¼ cups
Sugar2½ tbsp
Water⅔ cup
Cornflour (cornstarch)¼ cup, for dusting (potato starch is traditional)
Sweet red bean paste¾ cup, in 8 balls

Method

  1. 1Roll the red bean paste into 8 balls and chill.
  2. 2Mix the flour, sugar and water in a microwave safe bowl into a smooth batter.
  3. 3Cover and microwave 1 minute, stir with a wet spatula, then 1 minute more, stir, and 30 seconds more.
  4. 4Turn onto a board dusted with cornflour, dust the top and divide into 8.
  5. 5Flatten each piece, wrap around a red bean ball, pinch closed and turn seam down.
Serve it like this

Set on a small plate or paper cups, two per person, lightly dusted, with green tea alongside. Eat the same day for the softest texture.
