Fish800 g catfish, cleaned, in steaks
White yam (white african yam)200 g yam, boiled and pounded
Ground dried crayfish (ground dried shrimp)2½ tbsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)2, blended
Black pepper1½ tsp ground uziza seeds or black pepper
Iru (fermented locust beans)2 tsp ogiri or iru
Bitter leafa few utazi leaves (or bitter leaf), sliced
Onion1 small, chopped
Stock cube (bouillon cube)1 cube
Water5 cups
Saltto taste

Method

4 steps
  1. 1Rinse the catfish in hot water and salt to remove slime. Simmer with onion, stock cube and salt in the water for 10 minutes.
  2. 2Lift out the fish. Add pepper, crayfish, uziza and ogiri to the broth.
  3. 3Add the pounded yam in small lumps and simmer, stirring, until dissolved and thick.
  4. 4Return the fish, add utazi and simmer 3 minutes.
Serve it like this

Ladle into deep bowls with catfish steaks on top. Serve with pounded yam or on its own like a pepper soup.
