Ingredients

5 servings
Radish (daikon radish, mooli)1 white radish, in thick rounds
Egg6, boiled and peeled
Konnyaku1 block, in triangles
Fish cakesassorted fish cakes, chikuwa
Aburaage2 sheets, as pouches or in pieces
Potato3 small, peeled
Water6 cups
Kombua long piece, tied in knots
Bonito flakesa big handful
Soy sauce3 tbsp
Sugar2 tsp (or mirin)
Salt1 tsp
Prepared mustardkarashi or hot mustard, to serve

Method

5 steps
  1. 1Peel the radish, bevel the edges and simmer in water for 20 minutes. Boil the konnyaku 3 minutes.
  2. 2Make dashi with water, kombu and bonito. Strain, tie the softened kombu into knots and return to the pot.
  3. 3Season with soy, sugar and salt. Add radish, potatoes, konnyaku and eggs and simmer gently 40 minutes.
  4. 4Add the fish cakes and aburaage and simmer 15 minutes more.
  5. 5Turn off the heat and let it sit for at least an hour, then rewarm to serve with mustard.
Serve it like this

Serve from the pot at the table into shallow bowls with a little broth, a dab of hot mustard on the side.
