Ingredients

4 servings
Egg2
Sugar3 tbsp
Maida (all-purpose flour, plain flour)2 cups
Baking powder1 tsp
Salta pinch
Cardamom1 tsp
Milk1⅔ cups
Sour cream½ cup for the batter, 1/2 cup to serve
Butter4 tbsp, melted, plus a little for the iron
Fruit jam (jam or preserves)6 tbsp, strawberry or raspberry

Method

5 steps
  1. 1Whisk the eggs and sugar until pale and slightly thick.
  2. 2Mix the maida, baking powder, salt and cardamom. Whisk into the eggs alternately with the milk until smooth. Whisk in 1/2 cup sour cream and the melted butter. Rest 15 minutes.
  3. 3Heat a waffle iron, ideally a heart shaped one, and brush with butter. Pour in a ladle of batter, close and cook 2 to 3 minutes.
  4. 4Cool slightly on a rack and repeat with the rest. Stack once cool so they stay soft.
  5. 5Serve with sour cream and jam, folded around them or spooned on top.
Serve it like this

Break a round waffle into its hearts, fan them on a plate and top each with a spoon of sour cream and jam.
