Ingredients

4 servings
Goat trotters800 g cow foot (or goat trotters), cut and cleaned
Red palm oil⅓ cup
Baking soda (bicarb soda, bicarbonate of soda)½ tsp potash (akanwu) or baking soda
Ground dried crayfish (ground dried shrimp)1½ tbsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)2, blended
Onion1 large, half sliced
Nutmeg1 tsp ehuru (calabash nutmeg) or nutmeg
Bitter leafa few utazi leaves, sliced (or bitter leaf)
Stock cube (bouillon cube)1 cube

Method

4 steps
  1. 1Boil the cow foot with onion, stock cube and salt until very tender, topping up water. Reserve a little stock.
  2. 2Dissolve the potash in 3 tbsp water and strain. Stir it into the palm oil until the oil turns thick and yellow.
  3. 3Stir in crayfish, pepper, nutmeg and a splash of stock, then fold in the cow foot.
  4. 4Warm gently, pile into a bowl and top with sliced onion and utazi.
Serve it like this

Pile into a wooden bowl, scatter sliced onion and utazi leaves on top and serve warm with cold drinks.
