New Mexican green chile stew.

Ingredients

6 servings
Porkshoulder, in 2 cm cubes
Potato3 medium, cubed
Poblano pepperHatch green chiles or poblanos, roasted, peeled, chopped
Green chilli3 to 4, for heat
Onion1 large, chopped
Garlic4 cloves
Chicken stock (chicken broth)5 cups
Cumin powder (ground cumin)1 tsp
Dried oregano1 tsp
Maida (all-purpose flour, plain flour)2 tbsp
Cooking oil (vegetable oil)1½ tbsp
Saltto taste
Flour tortilla6 warm tortillas, to serve

Method

5 steps
  1. 1Char the poblanos over a flame until black, steam in a covered bowl, peel, seed and chop.
  2. 2Toss pork in flour and salt and brown in oil in batches.
  3. 3Add onion, garlic, cumin and oregano and cook until soft.
  4. 4Add stock, scrape the pan and simmer covered 45 minutes.
  5. 5Add potatoes, roasted chiles and green chillies and simmer 25 minutes until the potatoes are tender. Season.
Serve it like this

Ladle into deep bowls and serve with warm flour tortillas folded alongside for dipping. A sprinkle of oregano on top.
