Ingredients

2 servings
Cooked rice3 cups day old rice
Chicken, bonelessdiced
Egg2, fried, to top
Shallots4
Garlic4 cloves
Fresh red chillies (fresh red chiles)2 red chillies
Shrimp paste1 tsp terasi, toasted
Kecap manis2 tbsp
Soy sauce1 tsp
Cooking oil (vegetable oil)2 tbsp
Cucumberslices
Tomatoslices
Spring onion (green onion, scallion)1, sliced

Method

4 steps
  1. 1Pound shallots, garlic, chillies and toasted terasi into a rough paste.
  2. 2Fry the paste in oil until fragrant and darker, then add chicken and cook through with no pink.
  3. 3Add rice and toss over high heat. Add kecap manis and soy and keep tossing.
  4. 4Fry the eggs separately with crisp edges. Serve rice topped with egg, cucumber, tomato and spring onion.
Serve it like this

Mound the rice on a plate, lay the fried egg on top, and arrange cucumber and tomato on the side with prawn crackers and sambal.
