Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)bone in thighs and drumsticks
Buttermilk1 cup
Red chilli sauce2 tbsp hot sauce
Salt1 tbsp, divided
Maida (all-purpose flour, plain flour)1¼ cups
Black pepper1½ tsp
Cooking oil (vegetable oil)for frying, plus 1/3 cup hot oil for the paste
Red chilli powder (indian red chili powder)3 tbsp cayenne
Brown sugar2 tsp
Paprika2 tsp
Garlic2 cloves, grated
White bread4 slices
Dill pickles (gherkins)pickle chips

Method

6 steps
  1. 1Marinate chicken in buttermilk, hot sauce and half the salt for at least 1 hour, or overnight.
  2. 2Dredge in flour seasoned with pepper and the rest of the salt, pressing well.
  3. 3Fry at 160 to 170°C for 12 to 15 minutes, turning, until deep golden and cooked through with no pink at the bone.
  4. 4Mix cayenne, sugar, paprika and garlic, then carefully ladle in 1/3 cup of the hot frying oil and stir.
  5. 5Brush the paste all over the hot chicken.
  6. 6Serve on white bread topped with pickles.
Serve it like this

Lay a slice of white bread on a tray, set the chicken on top and crown with pickle chips. Coleslaw and cold drinks nearby.
