Classic Mysore pak.

Ingredients

12 servings
Besan (chickpea flour, gram flour)¾ cup plus 1 tbsp, sifted
Sugar1 cup
Water⅓ cup
Ghee1 cup, hot
Cardamoma pinch, optional

Method

5 steps
  1. 1Roast the besan in 2 tbsp ghee on low heat for 3 minutes. Keep the rest of the ghee hot on another burner.
  2. 2Boil sugar and water to a one string syrup.
  3. 3Add the besan to the syrup a spoon at a time, stirring to avoid lumps.
  4. 4Pour in hot ghee a ladle at a time, stirring constantly, letting each ladle absorb.
  5. 5When it froths up and leaves the sides with ghee oozing, pour into a greased tray. Cut while warm.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
