Ingredients

4 servings
Maida (all-purpose flour, plain flour)1¼ cups
Rice flour3 tbsp
Curd (plain yogurt, natural yoghurt)⅔ cup, sour
Green chilli2, chopped
Ginger1.5 cm, chopped
Curry leaves1 sprig, chopped
Fresh grated coconutsmall coconut pieces
Cumin seeds1 tsp
Black pepper½ tsp, crushed
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Cooking oil (vegetable oil)for frying
Saltto taste

Method

4 steps
  1. 1Mix maida, rice flour, curd, salt and soda into a thick batter. Beat for 2 minutes.
  2. 2Rest the batter, then add chilli, ginger, curry leaves, coconut, cumin and pepper.
  3. 3Drop small balls into medium hot oil with wet fingers.
  4. 4Fry till golden and serve with coconut chutney.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
