Ingredients

4 servings
Mutton (goat meat)400 g boneless, small cubes
Curd (plain yogurt, natural yoghurt)¼ cup
Ginger garlic paste1 tbsp
Red chilli powder (indian red chili powder)1½ tsp
Garam masala1 tsp
Lemonjuice of 1, plus wedges
Salt1¼ tsp
Cooking oil (vegetable oil)2 tbsp
Maida (all-purpose flour, plain flour)2 cups
Ghee2 tbsp
Egg4
Onion1, thinly sliced
Green chilli2, chopped
Chaat masala1 tsp

Method

5 steps
  1. 1Marinate mutton with curd, ginger garlic, chilli, garam masala, half the lemon and salt for at least 4 hours.
  2. 2Thread on skewers and grill or pan sear in oil until charred and cooked through, about 15 minutes.
  3. 3Knead maida with ghee, salt and water. Roll thin, flaky parathas and cook on a tawa.
  4. 4Pour a beaten egg on the tawa, lay a paratha on top and flip once set.
  5. 5Fill with kebabs, onion, chilli, chaat masala and lemon. Roll tightly in paper.
Serve it like this

Wrap half in paper and serve with lime wedges and sliced onion. Hot, from the tawa.
