Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in
Onion6 large, thinly sliced
Sumac3 tbsp
Olive oil½ cup
Almonds¼ cup, or pine nuts
Baharat1½ tsp
Cinnamon¼ tsp
Pita bread4 taboon breads or thick pitas
Saltto taste

Method

4 steps
  1. 1Rub the chicken with baharat, cinnamon, salt and a little oil. Roast at 200 C until golden and cooked through.
  2. 2Cook the onions slowly in most of the olive oil until very soft and sweet, then stir in the sumac.
  3. 3Spread the onions thickly over the breads and bake for 5 minutes.
  4. 4Top with the chicken, fried nuts and a final drizzle of olive oil.
Serve it like this

Serve whole on a large board, chicken on top, with yoghurt, salad and lemon. Tear and share.
