Ingredients

Drumstick (moringa pods)1, in pieces
Pumpkin1 cup
Brinjal (eggplant, aubergine)2 small
Okra (lady's finger)6
Onion1 small
Tomato1 small
Tamarinda lemon sized ball
Jaggery1 tbsp
Red chilli powder (indian red chili powder)2 tsp
Turmeric (ground turmeric)¼ tsp
Rice flour1 tbsp
Water3 cups
Cooking oil (vegetable oil)1½ tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp
Dried red chilli2
Curry leaves2 sprigs
Coriander leaves (cilantro)a handful

Method

3 steps
  1. 1Heat oil, temper mustard, fenugreek, red chilli and curry leaves. Add onion and vegetables and saute 3 minutes.
  2. 2Add tamarind extract, water, chilli, turmeric, jaggery and salt. Simmer until vegetables are tender.
  3. 3Stir in rice flour mixed with water and simmer until slightly thick. Add coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
