Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)1 large chicken, jointed
Red palm oil⅓ cup
Okra (lady's finger)300 g, trimmed
Pumpkin400 g butternut or pumpkin, cubed
Garlic6 cloves, crushed
Onion2, chopped
Tomato3, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 gindungo or scotch bonnet
Lemon juice2 tbsp
Water1⅔ cups
Saltto taste

Method

4 steps
  1. 1Marinate the chicken with garlic, lemon and salt for 30 minutes.
  2. 2Brown the chicken in palm oil, then add onion, tomato and pepper and cook until soft.
  3. 3Add water and pumpkin and simmer covered for 25 minutes.
  4. 4Add okra and simmer until the chicken is cooked through with no pink and the okra tender.
Serve it like this

Serve in a shallow bowl with funge or white rice, chicken on top and okra around.
