Classic Mississippi mud pie.

Ingredients

Chocolate cream biscuits (chocolate sandwich cookies)24 cookies, crushed
Butter¾ cup, divided
Dark chocolate (bittersweet chocolate)200 g
Sugar¾ cup plus 2 tbsp
Egg4
Cocoa powder (unsweetened cocoa powder)2 tbsp
Fresh cream (thickened cream, heavy cream)1 cup, chilled
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salta pinch

Method

5 steps
  1. 1Mix crushed cookies with 50 g melted butter and press into a 9 inch pie dish. Chill.
  2. 2Melt the chocolate with the remaining butter. Cool slightly.
  3. 3Whisk eggs and 160 g sugar until thick, then fold in the chocolate, cocoa and salt.
  4. 4Pour into the crust and bake at 160 C for 35 to 40 minutes.
  5. 5Cool completely, then chill. Whip the cream with the remaining sugar and vanilla and pile on top.
Serve it like this

Serve chilled slices with a generous dollop of whipped cream and chocolate shavings on top.
