Porkbelly or shoulder, sliced
Prawns (shrimp)shell on
Fish sauce2 tbsp
Garlic5 cloves
Shallots4
Sugar2 tsp
Turmeric (ground turmeric)1 tsp
Cooking oil (vegetable oil)1½ tbsp
Paprika1 tsp, or annatto
Chicken stock (chicken broth)3⅓ cups
Eggquail or hen eggs, boiled
Rice noodleswide flat rice noodles
Peanutsroasted, crushed
Rice papersesame rice crackers, toasted
Lettuceshredded
Mint leavesa handful
Basil leavesa handful
Lemonlime wedges
Fresh red chillies (fresh red chiles)sliced

Method

5 steps
  1. 1Marinate the pork and prawns with fish sauce, garlic, shallots, sugar and turmeric for 15 minutes.
  2. 2Fry in the oil with paprika until the pork browns and the prawns curl.
  3. 3Add the stock and eggs and simmer 15 minutes.
  4. 4Cook the noodles; toast the crackers over a flame or in a dry pan.
  5. 5Layer herbs and lettuce, noodles, toppings and just a ladle of broth. Scatter peanuts and break crackers over.
Serve it like this

Serve in a wide bowl with herbs below, toppings on noodles and a cracker on the side to break over. Lime and chilli at hand.
