Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)750 g curry cut chicken
Fenugreek leaves1 big bunch, chopped
Kasuri methi (dried fenugreek leaves)1 tbsp
Cooking oil (vegetable oil)2 tbsp
Whole spicesbay leaf, cloves, cardamom
Onion2 large, finely chopped
Ginger garlic paste1½ tbsp
Green chilli2
Tomato2, chopped
Curd (plain yogurt, natural yoghurt)½ cup, whisked
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Saltto taste

Method

5 steps
  1. 1Rub the chopped methi with a little salt, rest 10 minutes and squeeze out the bitter juice.
  2. 2Fry the whole spices and onion in oil until golden brown, then add ginger garlic paste and chillies.
  3. 3Add tomato and powdered spices and cook until soft, then add the chicken and sear until it changes colour.
  4. 4Lower the heat, stir in the curd, add the fresh methi, cover and cook until the chicken is tender and cooked through, with no pink at the bone.
  5. 5Finish with crushed kasuri methi and garam masala.
Serve it like this

Serve in a bowl with phulkas or lachha paratha and sliced onion with lemon.
