Ingredients

Basmati rice2 cups, soaked
Mutton (goat meat)600 g
Onion3, sliced
Curd (plain yogurt, natural yoghurt)⅔ cup
Tomato2, chopped
Ginger garlic paste3 tbsp
Green chilli5
Potato2, halved
Whole spicescinnamon, cloves, cardamom, bay
Red chilli powder (indian red chili powder)2 tsp
Garam masala1 tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)4 tbsp
Mint leavesa handful
Coriander leaves (cilantro)a handful
Lemon juice1 lemon
Water3¼ cups
Saltto taste

Method

5 steps
  1. 1Fry onions in oil until golden; add whole spices and ginger garlic.
  2. 2Add mutton, powders, curd, tomato and chillies; pressure cook for 4 whistles. Let the pressure release naturally.
  3. 3Add potatoes, mint, coriander and the water; boil.
  4. 4Add soaked rice and lemon; cook covered on low until done.
  5. 5Rest 10 minutes and fluff gently.
Serve it like this

Serve on a large platter with potatoes on top, alongside raita and kachumber.
