Ingredients

4 servings
Egg2
Sugar⅓ cup
Honey2 tsp
Maida (all-purpose flour, plain flour)1 cup
Baking soda (bicarb soda, bicarbonate of soda)½ tsp, dissolved in the water
Water2 tbsp
Cooking oil (vegetable oil)for the pan
Sweet red bean paste¾ cup

Method

5 steps
  1. 1Whisk the eggs, sugar and honey until pale and slightly thick.
  2. 2Stir in the soda water, then sift in the flour and fold to a smooth batter. Rest 15 minutes.
  3. 3Wipe a pan with oil and remove the excess. Pour a ladle on medium low heat.
  4. 4Flip when bubbles pop on top, cook 30 seconds more.
  5. 5Sandwich red bean paste between two pancakes, pressing the edges gently.
Serve it like this

Stack two or three on a small plate, one cut in half to show the filling, with green tea or milk alongside.
