Ingredients

4 servings
Dried white peas1 cup, soaked overnight
Water2½ cups
Saltto taste
Turmeric (ground turmeric)a pinch
Ginger2.5 cm, julienned
Green chilli2, chopped
Onion1, finely chopped
Tomato1, chopped
Lemon juice1½ tbsp
Tamarinda small piece, as thin water
Chaat masala1½ tsp
Cumin powder (ground cumin)1 tsp, roasted
Black salt¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Coriander leaves (cilantro)a handful

Method

4 steps
  1. 1Pressure cook soaked peas with water, salt and turmeric for 4 whistles; let pressure release naturally.
  2. 2Lightly mash a few peas in their liquid to thicken it.
  3. 3Spoon warm peas into bowls and top with onion, tomato, ginger and chilli.
  4. 4Season with tamarind water, lemon, chaat masala, cumin, black salt, chilli powder and coriander.
Serve it like this

Serve warm in small leaf bowls or cups with a wedge of lemon and a heap of onions. Kulchas on the side if you like.
